Birk Stål A/S ("Birk
Steel") is a producer of stainless steel
solutions for the meat Industry. They supply
hooks and gambles (rolling/sliding), hooks for
cuts - often called "
Christmas trees" for obvious reasons based on
their shape - steriliser units for cutting knives
and sinks for hand washing. Birk Steel excells in
two areas: standardization and creativity.
Birk guarantees that no product deviates from the specification by more than +/- 25 g and +/- 1-2 mm. This gives you a much better flow in your production and disposes of the problem of parts substitution. The quality of Birk Steel's standardization has earned them approval by the Danish Meat Producers Standardization Committee - the only company to achieve this.
The patented sink for hand-washing is a great example of Birk Steel's creativity. The sink has no lateral surface so the water always runs off and it is completely sealed at the bottom. This removes any opportunity for bacteria to latch on and grow.
Another example is the sterilizer for cutting knives. There are sections for two knives to allow maximum flexibility for the butcher.

keeps the water at the set temperature without
deviations. And it stays efficient because it is
constructed without surfaces where chalk and other
sediments could stick. Water savings of up to 20%
are possible with the Birk Steel sterilizer. The
sterilizer reports directly to the PLC on a regular
basis - your best documentation for having complied
with required temperature directives at all times.

These knives are well known for their
excellent finger stop. The shaft is made from
a material that contains 30% glass which
enables them to survive dish-washing without
trouble. There is a complete seal between the
steel and the shaft, which means 100%

is a newcomer in the food industry, but
well-experienced in building NIR-based
spectrometers for other businesses.
An NIR instrument can always be calibrated to measure the fat, protein and moisture content of trimmings, minced meat for sausages, hamburgers etc. The strength of the ASDI solution is that, contrary to most other NIR solutions, it is "post-dispersive". This means that you can measure a sample locally without having to first shield it from the environment. Consequently you will be able to stand right next to the production line and do your analysis - simply and easily.
As if that weren't enough, the instrument itself is comparatively small and compact which means you can carry it with you from one point of control to another.
The instrument also comes as an on-line
solution in case you are looking for a continuous
flow analysis. This is often the optimal solution
for process control and may save quite a lot of
money on protein because you get total information
of the composition and thus can get much closer to
your declared specifications without violating
legal regulations. In other words an online
solution gives you a very short pay back time. The
on-line instrument covers a relatively broad area
of a conveyor, and because the technology is
post-dispersive you actually just hang it up above
the conveyor.
